Ingredients
15 jumbo pasta shells
12 ouncesJENNIE-O TURKEY STORE® Premium Deli Turkey Breast form the service deli, cut into thin strips
1 cup zucchini, shredded
1/2 cup red pepper, finely chopped
2 tablespoons grated Parmesan cheese
3 tablespoons olive oil
3 tablespoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions
Cook pasta according to package directions.
In large bowl, combine turkey, zucchini, bell pepper and cheese.
In small bowl, whisk together oil, vinegar, garlic, Italian seasoning, sugar, salt, and black pepper. Pour over turkey mixture; toss well to coat.
Spoon turkey mixture into each pasta shell. Place the shells, filled side up, in a baking dish. Cover and chill several hours or overnight.
