Ingredients
1 cup onion, chopped
1 green bell pepper, chopped
3/4 cup celery, sliced
4 cloves garlic, minced
2 tablespoons flour
1 tablespoon cajun, blackened, or creole seasoning mix
1 package JENNIE-O TURKEY STORE® Extra Lean Boneless Turkey Breast Tenderloins , cut into chunks
1 (14 1/2 ounce) can cajun-style, or regular stewed tomatoes, undrained
1 (14 1/2 ounce) can fat-free, reduced-sodium chicken broth
1 (10 ounce) package frozen sliced okra, thawed
1/4 teaspoon hot pepper sauce
1/4 cup bacon bits
1/4 cup fresh parsley, chopped, divided
Directions
Coat a large nonstick saucepan or deep skillet with cooking spray; heat over medium heat. Add onion, bell pepper, celery, and garlic; cook 8 minutes, stirring occasionally until vegetables are softened. Meanwhile, combine flour and cajun seasoning; mix in plastic bag. Add tenderoin chunks; toss to coat. Add turkey and any remaining flour mixture from bag to saucepan; cook 5 minutes, stirring occasionally. Add tomatoes, chicken broth, okra, and hot pepper sauce; bring to a boil. Reduce heat, and simmer, uncovered for 15 minutes or until turkey is well-done, 165°F as measured by a meat thermometer. Stir occasionally. Remove from heat; stir in bacon bits. Ladle into bowls; top with fresh parsley.
