Ingredients
1/4 cup prepared roasted tomato sauce
1/2 cup (2 ounces) shredded Monterey jack cheese
1 small onion, grilled and diced
3/4 pound JENNIE-O TURKEY STORE® Deli Premium Seasoned Buffalo Style Turkey Breast, thinly sliced
6 Portabella mushroom caps, cleaned and stems removed
1/4 cup (1 ounce) shredded Cheddar cheese
Directions
Place mushroom caps on baking sheet. Heat oven to 350°F. Spread tomato sauce inside each mushroom cap.
Sprinkle with Monterey jack cheese, onion, turkey and Cheddar cheese.Bake for 10 to 12 minutes until cheese is melted and mushrooms are cooked.
Variations:
Any variety of JENNIE-O TURKEY STORE® turkey breast can be used in this recipe. Try spreading mushrooms with basil pesto sauce instead of tomato sauce. Sprinkle with Parmesan and mozzarella cheeses. Olive tapenade would work well spread over the mushrooms.
