Ingredients
1 package JENNIE-O TURKEY STORE® Lean Sweet Italian Turkey Sausage
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
1 cucumber, cut into thin strips
1 small red onion, cut into thin strips
1/2 cup vinaigrette or Italian dressing
salt and pepper, if desired
6 (14 inch) spinach wraps
10 ounces soft herb goat cheese
Directions
Cook the sausage as specified on the package. Always cook to well done, 165° as measured by a meat thermometer. Remove sausages from the skillet, let cool slightly and cut diagonally into 1/4 inch slices.
In a medium bowl, toss bell peppers, cucumber, and red onion with the vinaigrette. Season with salt and pepper, if desired. Spread the center portion of each spinach wrap with soft herb goat cheese. Divide the vegetable strips and the sausage slices evenly among the wraps, spreading on top of the cheese. Fold or roll each wrap.
May be made and refrigerated up to 2 hours ahead.
