Ingredients
2 cups JENNIE-O TURKEY STORE® Extra Lean Oven Roasted Turkey Breast, diced
1 cup cooked brown rice
1 (15 ounce) can black beans, drained and rinsed
1 cup diced fresh or canned mango
2 green onions, thinly sliced
1 cup salsa, slightly drained
2 tablespoons extra virgin olive oil
2 tablespoons fresh squeezed lime juice
1 tablespoon honey
1/2 teaspoon ground cumin
lettuce leaves
Directions
In a large bowl, combine the turkey, rice, beans, mango, and green onions. In a separate bowl, combine salsa, olive oil, lime juice, honey, and cumin. Toss dressing with the turkey and bean mixture. Chill salad until ready to serve. Serve salad in lettuce cups.
