Great for a quick breakfast or brunch, this recipe features scrambled eggs, turkey bacon and colby cheese in a warm flour tortilla for a filling meal at under 300 calories per serving!

1 (12-ounce) package JENNIE-O® Turkey Bacon

1 tablespoon butter

1½ cups egg substitute or 6 eggs

1 cup shredded Colby cheese

4 (8-inch) flour tortillas

salsa and sour cream, if desired


STEP 1: Cook turkey bacon as specified on the package. Crumble bacon and set aside.

STEP 2: Melt butter in a large skillet. Add eggs and cook until soft scrambled. Stir in cheese and bacon.

STEP 3: Meanwhile, heat tortillas according to package directions. Spoon egg mixture evenly down center of each tortilla and roll up. Serve immediately with salsa and sour cream.
