Grilled Turkey Burger with Roasted Red Pepper Mayonnaise

    Ingredients
  • 1 20-ounce package 99% fat free JENNIE-O TURKEY STORE® Ground Turkey
  • 2 finely chopped green onions
  • 1 cup finely chopped fresh spinach (about 3 ounces fresh baby spinach leaves)
  • 1/2 cup fresh whole wheat bread crumbs
  • 1/2 teaspoon salt
  • ROASTED RED PEPPER MAYONNAISE
  • 1/2 cup chopped roasted red pepper* (be sure to drain any excess juice)
  • 2 tablespoons light mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon grated lemon peel
  • FOR ASSEMBLY
  • 6 whole wheat English muffins or whole grain burger buns
  • 6 leaves lettuce
  • 6 tomato slices
  • 6 white onion slices (grilled if desired)

    Directions
  1. Prepare the “mayonnaise” by placing mayonnaise ingredients in the jar of a blender or in the bowl of a food processor. Blend or process for several minutes until smooth. Transfer to a small bowl and refrigerate until serving time.
  2. In large bowl combine all turkey burger ingredients. Mix well. Form into six (1/2-inch thick) patties.
  3. Heat grill or broiler for medium high heat. Spray grill rack or broiler pan with nonstick cooking spray. Grill or broil burgers 4 to 6 inches away from heat, turning once, 3 to 4 minutes on each side or just until center is no longer pink. Be careful not to overcook or burgers will be dry.
  4. Spread mayonnaise on toasted buns. Place turkey burger on roll. Top with lettuce, tomato and onion slices.
