Course Description:

The main objective of the training is to give participants an understanding of the science behind the processing side of Jennie-O Turkey Store’s business. Topics to be included in the training include Live Production, basic meat science principles, effects of non-meat ingredients, microbiology principles, and much more.


Breakout hands-on laboratory training will cover:

• Meat processing
• Tumbler and mixing considerations
• Stuffing considerations
• Pickle and marinade mixing considerations
• Cooked product defects
• Oven demonstrations
