Make-Ahead Cheesecake-Stuffed Baked Apples

With caramel-drizzled cheesecake baked directly into tart green apples, this holiday dessert recipe should have a holiday of its own! Save precious holiday time and make the cheesecake mix a day ahead.

Ingredients

  • 5 Granny Smith apples
  • ½ teaspoon ground cinnamon
  • 8 ounces ricotta cheese
  • ¼ cup sugar
  • 2 eggs, lightly beaten
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • ½ cup caramel sauce, warmed
  • ¼ teaspoon kosher salt
  • 5 cinnamon sticks, if desired

Directions

  1. Heat oven to 350°F.
  2. Cut tops off apples. Scoop out core and flesh, leaving ¼-inch border. Sprinkle with cinnamon.
  3. Stir together ricotta cheese, sugar, eggs, flour and vanilla in a medium bowl. Spoon ricotta cheese mixture into apples.

  4.  Place on baking sheet and bake for 25 minutes. Let stand 10 minutes. Drizzle with warmed caramel sauce and sprinkle with kosher salt. Garnish with cinnamon sticks, if desired.
  5. To save time, the cheesecake mixture can be made up to one day ahead of time.
