Ingredients

  • 4 slices JENNIE-O® Turkey Bacon
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 celery ribs, chopped
  • 4 cups cubed butternut squash
  • 1 Granny Smith apple, peeled and chopped
  • 6 cups vegetable broth
  • 2 teaspoons chopped fresh thyme leaves
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • fresh parsley, chopped, if desired

Directions

  1. Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Finely chop turkey bacon. Set aside.
  2. In Dutch oven, heat oil over medium-high heat. Sauté onion and celery for 7 minutes or until translucent. Stir in butternut squash and apple. Cook 5 minutes. Add vegetable broth, thyme, salt and pepper. Bring to boil. Reduce heat to medium-low.
  3. Cover and simmer 30 minutes or until tender. Puree with hand blender until smooth. Top servings with turkey bacon and fresh parsley, if desired.
