Ingredients

  • 1 (24-ounce) package JENNIE-O® Turkey Breast Tenderloin
  • 3 oranges, peel and pith removed, and coarsely chopped
  • 2 limes, peel and pith removed, and coarsely chopped
  • ½ cup chopped green onion
  • 1 red bell pepper, thinly sliced
  • 1 jalapeno, seeded and thinly sliced
  • ¼ cup chopped fresh cilantro leaves
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon sugar
  • 2 cups cooked quinoa

Directions

  1. Cook tenderloin as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. In medium bowl, combine, oranges, limes, green onion, bell pepper, jalapeno, cilantro, olive oil, salt and sugar.
  3. Slice tenderloin and serve over quinoa with orange mixture.
