Buffalo Chicken Meatballs

Ingredients

  • 1 (16-ounce) package JENNIE-O® Ground Chicken
  • ½ cup breadcrumbs
  • ⅔ cup cayenne pepper sauce, divided
  • ¼ cup finely chopped onion
  • ¼ cup finely diced celery
  • 1 teaspoon salt, if desired
  • 1 egg or ¼ cup egg substitute
  • 2 tablespoons butter
  • celery sticks
  • blue cheese dressing

Directions

  1. Heat oven to 400°F. Lightly coat 13x9-inch pan with cooking spray.
  2. In medium bowl, combine chicken, breadcrumbs, 2 tablespoons cayenne pepper sauce, onion, celery, salt and egg; mix lightly. Shape mixture into 1 ½ -inch balls. Place in pan.
  3. Bake 16 to 20 minutes or until cooked through. Always cook to well-done, 165°F as measured by a meat thermometer.
  4. In large skillet, over medium heat combine butter and remaining cayenne pepper sauce; cook 1 to 2 minutes or until butter is melted stirring occasionally. Add cooked meatballs and toss to coat.
  5. Serve with celery sticks and blue cheese dressing.
