Ingredients

  • 2 cups pearl couscous
  • 1 (19.5-ounce) package JENNIE-O® Habañero Apricot Seasoned Turkey Sausage
  • 1 cup chopped fresh spinach leaves
  • 1 cup dried apricots, chopped
  • ½ cup toasted almonds
  • ¼ cup finely chopped red onion
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • ½ cup chopped fresh cilantro leaves
  • ½ teaspoon kosher salt

Directions

  1. Cook couscous according to package directions. Drain and cool completely.
  2. Cook sausages as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 10 minutes and cut into 1-inch pieces.
  3. In large bowl, combine couscous, sausage, spinach, almonds, onion, vinegar, honey, cilantro and season with salt, if desired.
