A delicious, diverse medley of flavors are at the heart of this adventurous weeknight dinner. Fresh fruit, roasted peppers, rice, curry and lean deli turkey come together in this wrap.

Ingredients

  • 2 cups white rice, cooked and chilled
  • 1 cup chopped pineapple
  • ½ cup golden raisins
  • ½ cup diced roasted red peppers
  • 6 green onions, thinly sliced
  • 1½ teaspoons curry powder
  • 2 tablespoons boiling water
  • ½ cup mayonnaise
  • 8 ounces JENNIE-O® DELI FAVORITES® Oven Roasted Turkey Breast diced, from the service deli
  • 4 flour tortillas

Directions

  1. In medium bowl, mix rice, pineapple, raisins, roasted peppers and green onions.
  2. In small bowl, mix curry powder with boiling water and let stand for 10 minutes. This helps bring out the flavor of the curry powder. When curry mixture is cool, stir in mayonnaise and add rice mixture.
  3. Place tortillas on work surface. Divide turkey and rice mixture evenly among tortillas. Roll up to secure filling. Wrap in plastic wrap and chill until ready to serve.
