Italian Turkey Fettuccine

Ingredients

  • 1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into thin strips
  • 1 teaspoon olive oil
  • 1 cup shredded carrot
  • 1 cup shredded zucchini
  • ½ cup sliced green onion
  • ½ teaspoon dried oregano leaves
  • ½ cup cherry tomatoes, halved
  • ½ cup white wine
  • 4 cups fettuccine, cooked
  • ¼ cup shredded Parmesan cheese

Directions

  1. In skillet over medium-high heat, sauté turkey tenderloin strips in oil 8 to 10 minutes or until lightly browned. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. Add carrot, zucchini, green onion and oregano. Cook 5 minutes, stirring frequently. Add tomatoes and wine. Simmer 2 to 3 minutes or until liquid has been reduced. Toss with pasta. Sprinkle with cheese.
