Thai Turkey Wraps

Ingredients

  • 1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
  • 2 heads Bibb lettuce
  • 1 carrot, peeled and diced
  • 1 clove garlic, chopped
  • 1 tablespoon minced fresh ginger
  • juice of 1½ limes
  • 2 tablespoons chili sauce
  • ¼ cup chopped fresh cilantro leaves
  • ¼ cup chopped green onions
  • 1 red pepper, diced
  • ½ cucumber, diced
  • 1 tablespoon olive oil
  • 2 tablespoons chopped roasted cashews

Directions

  1. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Immediately transfer meat to a shallow dish and cool in refrigerator.
  2. Remove core from head of lettuce; wash and dry leaves. Combine carrot and next nine ingredients. Stir in cooked and chilled turkey.
  3. Arrange lettuce leaves on the outer rim of a serving plate. Spoon turkey mixture onto the center of each lettuce leaf to create wraps. Garnish with cashews.
