Ingredients

  • TURKEY SALAD
  • ¼ cup fat-free mayonnaise
  • 1 cup chopped JENNIE-O® DELI FAVORITES® Oven Roasted Turkey Breast
  • 2 tablespoons chopped green pepper
  • 2 tablespoons chopped red pepper
  • ¼ cup thinly sliced green onion
  • ¼ cup diced celery
  • CORN CAKES
  • 2 cups frozen corn kernels, thawed
  • ½ cup thinly sliced green onion
  • ⅓ cup flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons milk

Directions

  1. To make the turkey salad, in bowl combine, mayonnaise, turkey, green and red pepper, onion and celery; cover and refrigerate until ready to use.
  2. To make the corn cakes, in bowl combine, corn, onion, flour, baking powder, baking soda and milk. Heat a non-stick skillet over medium heat. Drop 1 tablespoon of corn cake mixture about 1½-inches apart in hot skillet. Spread mixture to make corn cakes round. Cook about 2 minutes per side until golden brown.
  3. Place corn cakes on a serving platter. Top with turkey salad mixture.
