Ingredients

  • 1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links, casings removed
  • 1 teaspoon butter
  • 1 cup egg substitute or 4 eggs, lightly beaten
  • ¼ cup shredded Mexican cheese
  • 4 tostada shells
  • 1 cup salsa
  • ½ cup thinly sliced green onion

Directions

  1. Cook and crumble sausages. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. In medium skillet, melt butter over medium heat. Add eggs. Cook, stirring occasionally, 3 minutes or until eggs are almost set. Stir in cheese. Stir until cheese is melted and eggs are set. Remove and keep warm.
  3. Top each warm tostada with sausage, scrambled eggs, salsa and green onion.
