Ingredients

  • 12 slices JENNIE-O® Turkey Bacon
  • 8 Roma tomatoes, quartered
  • 3 tablespoons light mayonnaise
  • 1 tablespoon chopped fresh dill
  • 8 slices ciabatta bread, toasted
  • 1 cup arugula leaves
  • balsamic vinegar, drizzled

Directions

  1. Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
  2. Heat oven to 350°F. Place wire rack on baking sheet and spray with cooking spray. Arrange tomatoes, cut side up, in single layer on rack. Roast 1 hour or until tomatoes are wilted and lightly browned.
  3. In small bowl, combine mayonnaise and dill. Spread over each slice of bread. Top each slice of bread with bacon, tomatoes and arugula. Drizzle with balsamic vinegar.
