Ingredients

  • 1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Patties
  • 3 cups sliced assorted green, yellow and red bell peppers
  • 1 (15-ounce) carton southwestern style cholesterol free real egg product
  • 6 whole wheat flour tortillas
  • WHOLLY GUACAMOLE® dip, if desired
  • 1 cup Colby Jack cheese
  • 1 (15-ounce) can black beans, rinsed, drained and warmed
  • WHOLLY SALSA® dip, if desired

Directions

  1. Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble patties and set aside.
  2. In large, non-stick skillet, cook peppers 5 minutes or until softened; set aside. In same skillet, add eggs. Cook and stir over medium-low heat until set.
  3. Spread each tortilla with guacamole, if desired. Arrange sausage, egg, peppers, cheese and black beans down center. Top with salsa, if desired. Roll-up to enclose filling.
