Ingredients

  • 1½ pounds JENNIE-O® Bone-in Turkey Pot Roast
  • 1 tablespoon oilve oil
  • 1 red onion, diced
  • 1 red, yellow and green bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • 2 teaspoons chili powder
  • 8 flour tortillas, warmed
  • salad greens, salsa, cheese and sour cream, if desired

Directions

  1. Shred turkey pot roast. In large skillet over medium-high heat, add oil and sauté onion, peppers and garlic 2 minutes or until onions are softened. Add chili powder. Cook 1 minute; stir in turkey pot roast.
  2. Assemble tortillas with meat mixture and salad greens, salsa, cheese and sour cream, if desired.
