Ingredients

  • 4 cups chopped, cooked JENNIE-O® Oven Roasted Whole Turkey
  • ½ red bell pepper, chopped
  • ½ cup green onion, chopped
  • ½ cup fresh arugula leaves, chopped
  • ½ cup fresh blueberries, coarsely chopped
  • ⅓ cup plus 2 tablespoons mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 teaspoons grated lime rind
  • garnish: sliced almonds, toasted, if desired

Directions

  1. In large bowl combine, turkey, red bell pepper, green onion, parsley and blueberries; Set aside.
  2. In small bowl whisk together mayonnaise, lime juice, honey and grated lime rind.
  3. Stir mayonnaise mixture into turkey mixture and garnish with almonds, if desired.
