This simple dessert recipe takes the simple carrot cupcake and adds a new dimension with fresh cream cheese frosting and cinnamon apples. Under 300 calories per serving!

Ingredients

  • 1 (21.41-ounce) package carrot cake mix
  • 1 (16-ounce) container cream cheese frosting
  • ½ cup HORMEL® cinnamon apples
  • ½ cup chopped pecans, toasted

Directions

  1. Heat oven to 350°F. Line 24 muffin cups with paper liners. Prepare cake mix according to package directions. Fill muffin cups with batter.
  2. Bake according to package directions. Cool. Frost tops with cream cheese frosting. Place apple slices on frosting. Sprinkle tops with chopped pecans.
