Ingredients

  • 2 tablespoons butter
  • 1 (10-ounce) package frozen corn, thawed
  • 1 red pepper, chopped
  • 1 cup chopped zucchini
  • 2 green onions, chopped
  • 1 jalapeño, seeded, chopped
  • ½ cup salsa
  • 2 tablespoons chopped cilantro
  • salt and pepper, if desired

Directions

  1. In large skillet over medium-high heat, melt butter. Add corn, red pepper, zucchini, green onion and jalapeño. Cook 6 minutes.
  2. Mix in salsa and cilantro. Cook 1 minute. Season with salt and pepper, if desired.
