Ingredients

  • 1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Turkey
  • 10 (6-inch) soft tortillas
  • 3 cups shredded spinach
  • 2 cups shredded Cheddar cheese
  • 2 cups pico de gallo
  • 2 cups cilantro lime sauce
  • CILANTRO LIME SAUCE
  • 2 large jalapeños, seeded and coarsely chopped
  • 2 large garlic cloves, smashed
  • 2 teaspoons ginger
  • 2 tablespoons minced white onion
  • 1 tablespoon fresh lime juice
  • ¼ cup water
  • 2 cups mayonnaise
  • ¼ cup finely chopped cilantro

Directions

  1. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. To each tortilla, add spinach, cheese, pico de gallo and cilantro lime sauce (directions below).
  3. Cilantro Lime Sauce
  4. In blender, puree jalapeños, garlic, ginger, onion, lime juice and water until smooth. Add mayonnaise and cilantro and pulse a few times. Makes about 3 cups.
  5. The sauce can be made ahead and refrigerated up to 3 days.
