(13-ounce) package JENNIE-O® Andouille Turkey Sausage, sliced
small red onion, thinly sliced
green bell pepper, chopped
garlic cloves, chopped
(15-ounce) cans red kidney beans, undrained
(14.5-ounce) can diced tomatoes, undrained
cup vegetable broth
teaspoon Cajun seasoning
green onions, chopped
cooked rice, if desired
In large cast-iron skillet, heat oil over medium heat. Cook sausage 5 to 7 minutes or until browned.
Stir in onion, bell pepper and garlic and cook until softened. Add beans, tomatoes, broth and seasoning. Bring mixture to a boil. Reduce heat, cover and simmer 20 minutes. Stir in green onions. Serve over rice.
