avocados, halved and pitted
ounces cream cheese, softened
cup chopped tomatoes
teaspoon ground black pepper
pinch cayenne pepper
cup egg substitute
ounces JENNIE-O® Turkey Ham, diced and browned
cup crumbled Cotija cheese
Scoop flesh of each avocado, leaving about a 1/8-inch border and place in medium bowl. Add cream cheese, tomatoes, salt, pepper, and cayenne pepper; mix well to combine. Spoon mixture into avocado halves.
In medium non-stick skillet, over medium heat, cook eggs just until set. Place a small amount of egg on top of each avocado.
Top with turkey ham and crumbled cheese.
