Greek Pasta Salad

Ingredients

  • 1 (16-ounce) box farfalle pasta
  • 1½ cups English cucumber slices
  • ½ cup sliced red onion
  • ½ cup olives, pitted and coarsely chopped
  • ½ cup chopped roasted red bell pepper
  • 1 cup cherry tomatoes, cut in half
  • 2 tablespoons olive oil
  • 2 tablespoons lemon peel
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes
  • ⅓ cup chopped fresh parsley leaves
  • 4 ounces feta cheese, crumbled

Directions

  1. Cook pasta according to package directions and let cool.
  2. In large bowl, combine cucumber slices, onion, olives, red bell pepper, tomatoes, olive oil, lemon peel, lemon juice, salt, red pepper flakes and parsley.
  3. Stir in cooled pasta and top with feta cheese. Serve immediately or cover and refrigerate until ready to serve.
