Take an Asian classic and put a healthy spin on it with this Sweet & Sour Chinese Turkey Salad recipe. Guilt-free and packed with protein, this salad is anything but bland.
(17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
cups torn romaine lettuce
slices pineapple, cut crosswise into 0.5-inch thick slices, then cut in quarters
oranges, peeled and cut in slices crosswise
cups sliced cucumber
tablespoons orange juice
teaspoons low-sodium soy sauce
teaspoons sesame oil
tablespoons chopped roasted cashews
Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place turkey breast cutlets in hot skillet. Cook, turning occasionally, 11 to 13 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
Slice turkey crosswise into 1-inch thick slices.
On four plates, divide lettuce. Layer turkey, pineapple, oranges, cucumber and radishes on lettuce.
In small bowl, whisk orange juice, honey, soy sauce and sesame oil. Pour dressing over salads; sprinkle with cashews.
