pounds frozen, peeled yuca pieces

chicken bouillon cubes

cup whole milk

tablespoons butter
Suggested toppings: Chopped parsley, chopped chives, grated cheddar cheese and black pepper

Bring 8 cups water to boil in large saucepan. Add frozen yuca pieces and 2 bouillon cubes. Boil 20 to 25 minutes or until yuca is fork tender. Drain.

Mash yuca in pot while still hot. Pick out any remaining hard woody core pieces and discard.

Add milk, butter and remaining bouillon cube. Stir over medium heat until creamy, like mashed potatoes, about 2 minutes. Add a little milk more if consistency is too thick. Serve immediately with suggested toppings.
