medium sized russet potatoes

tablespoons butter
2
tablespoons olive oil
1/4
teaspoon garlic powder
2
tablespoons breadcrumbs
2
tablespoons grated Parmesan cheese

Heat oven to 425°F. In small saucepan over medium heat, melt butter. Stir in olive oil and garlic powder. Set aside. In small bowl combine breadcrumbs and cheese. Set aside.

On cutting board, place 1 potato between two wooden spoon handles or chopsticks. Make 1/8 inch slices in top of potatoes, making sure not to cut through. Place potatoes into buttered casserole dish. Brush potatoes liberally with butter mixture, trying to get down into cuts. Sprinkle with salt. Bake 30 minutes. Remove from oven. Brush again with butter mixture. Sprinkle each with breadcrumbs mixture. Bake 20 to 25 minutes, or until golden and toothpick pierces potato easily.
