Ingredients

  • 1 (12-ounce) package fresh or frozen, thawed cranberries
  • ½ cup sugar
  • ¼ cup fresh orange juice
  • 1 tablespoon minced gingerroot
  • 2 teaspoons grated orange zest
  • ¼ cup fresh mint leaves, coarsely chopped

Directions

  1. In medium saucepan combine cranberries, sugar, orange juice, gingerroot and orange zest. Bring mixture to a boil over medium heat; reduce heat to medium-low and simmer 8 to 10 minutes or until thickened. Let stand 5 minutes.
  2. Stir in mint leaves. Cover and refrigerate until ready to use.
