Turkey Taste of India Rice

Ingredients

  • 1 tablespoon vegetable oil
  • ¼ cup onion, diced
  • 2¼ cups reduced sodium chicken broth
  • 1 clove garlic, chopped
  • 1 teaspoon Garam Masala spice
  • ¼ teaspoon ground ginger
  • 12 ounces brown long grain rice, prepared according to package directions
  • 1½ cups Premium Oven Roasted Turkey Breast, diced, from the service deli
  • ½ fresh jalapeno, finely chopped, seeds removed
  • ½ cup peas and carrots
  • ½ cup slivered almonds

Directions

  1. Heat oven to 375°F.
  2. In kettle, heat oil. Add onions and cook until tender. Add broth, garlic and spices and bring to a boil.
  3. In baking pan, add prepared rice, turkey, jalapeno, peas and carrots. Add broth stir and cover. Bake 30 minutes. Sprinkle with almonds.
