Have holiday leftovers but don’t want to go the sandwich route? Try this kid-friendly classic: turkey breast, peas, carrots and gravy baked in a flaky puff pastry. Under 500 calories per serving!

Ingredients

  • 1 cup stuffing
  • 2 cups chopped leftover JENNIE-O® OVEN READY™ Bone-In Turkey Breast
  • 1 cup leftover gravy
  • 1 cup frozen pea and carrot mix, thawed
  • ½ (17.3-ounce) package ready-made puff pastry sheets, thawed according to package directions
  • ¼ cup egg substitute or 1 egg, lightly beaten

Directions

  1. Heat oven to 375°F. Spray 4 ovenproof ramekins with cooking spray; place on baking sheet. Spoon ¼ cup stuffing into ramekins.
  2. In medium bowl, combine turkey, gravy and pea and carrot mix. Spoon into ramekins.
  3. Cut one sheet pastry into 4 squares. Place 1 pastry square over each ramekin. Make 3 or 4 small slits in pastry to allow steam to escape. Brush pastry with egg. Bake 30 to 35 minutes or until pastry is crisp and browned.
