Here’s a quick weeknight dinner solution, Pasta Turkey Salad with Dill Dressing: Bow tie pasta tossed with artichokes, cherry tomatoes, lean turkey breast and freshly chopped dill and ready in under 30 minutes!
cup fat-free mayonnaise
tablespoons red wine vinegar
tablespoons chopped fresh dill
garlic clove, minced
TURKEY PASTA SALAD
cups bow-tie pasta
(10-ounce) jar artichokes, drained, coarsely chopped
cups cherry or grape tomatoes, halved
cups cubed leftover JENNIE-O® OVEN READY™ Turkey
cup sweet red peppers strips, drained
cup pitted kalamata olives
cup thinly sliced red onion
To make dill dressing, in small bowl, whisk together mayonnaise, vinegar, dill and garlic.
To make turkey pasta salad, cook pasta as specified on the package. Drain pasta and rinse under cold water; drain well.
In large bowl, toss pasta, artichokes, tomatoes, turkey, peppers, olives and onion. Drizzle with dressing; gently toss.
