Ingredients

  • 10 slices JENNIE-O® Turkey Bacon
  • 1 onion, chopped
  • 2 tablespoons butter
  • 2 cups risotto rice
  • 1 pint grape tomatoes, halved
  • 1 quart reduced-sodium chicken broth, heated
  • 4 tablespoons Parmesan cheese

Directions

  1. Heat oven to 375°F. Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. In skillet, cook onion and butter 3 to 4 minutes until soft. Add bacon and rice; mix. Add grape tomatoes and hot stock; stir.
  2. Cover and bake 30 minutes. Remove from oven and stir in cheese.
