Ingredients

  • 6 slices whole wheat bread, cubed
  • 1½ cups cholesterol-free real egg product
  • 2½ cups skim milk
  • 1 (8-ounce) can pineapple tidbits in juice, drained
  • ½ cup dried cranberries
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 6 to 8 slices JENNIE-O® Turkey Bacon, cooked and crumbled
  • reduced-calorie maple syrup, if desired

Directions

  1. Heat oven to 350°F. Lightly spray 9x13-inch baking dish with cooking spray. Place bread cubes in baking pan. In large bowl, whisk together eggs and milk. Add pineapple tidbits, cranberries, cinnamon and vanilla. Pour mixture over bread cubes and lightly push down with a fork until the bread is covered with egg mixture. Sprinkle with turkey bacon. Bake 45 to 55 minutes or until set. Serve with maple syrup, if desired. Always cook to well-done, 165°F as measured by a meat thermometer.
