Loaded Quinoa Turkey Burgers

The best burgers are the ones you make yourself. These gourmet turkey burgers are loaded with quinoa, red onion and goat cheese — and they’re under 300 calories per serving!

Ingredients

  • 1 cup quinoa
  • ¾ water
  • 1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
  • 2 tablespoons liquid eggs
  • ½ medium red onion, finely diced
  • ¼ cup roughly chopped walnuts
  • ¼ cup goat cheese
  • 1 teaspoon cumin
  • 6 whole grain sandwich thins or gluten free burger buns
  • 2 tablespoons honey mustard
  • 12 fresh basil leaves
  • 1 medium avocado, cut into 18 thin slices

Directions

  1. In saucepan, combine quinoa and water. Bring to boil, cover and let simmer 20 minutes. Fluff with fork; set aside.
  2. In large bowl, gently combine ground turkey, quinoa, eggs, red onion, walnuts and goat cheese. Sprinkle cumin over top and gently work into meat mixture. Form into 6 (½-inch) thick patties. Spray large skillet with olive oil spray. Place patties in skillet on medium heat. Cook 18 minutes, covered, turning 2 to 3 times and until 165°F as measured by a meat thermometer. Always cook to well-done. (Add 2 tablespoons water after the first turn to prevent cheese from burning, if desired.)
  3. Place each patty on a bun with honey mustard, 2 basil leaves and 3 slices of avocado.
