Creamy Parmesan & Turkey Penne

Ingredients

  • 1 (13-ounce) package penne pasta
  • 1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey
  • 1 cup diced red onion
  • 1 cup sliced mushrooms
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 (14.5-ounce) jar Alfredo sauce
  • 1 cup fat-free sour cream
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons Parmesan cheese
  • 6 slices Provolone cheese

Directions

  1. Heat oven to 350°F. Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan.
  2. In large skillet, cook turkey as specified on the package. Always cook to well-done, 165°F as measued by a meat thermometer. Add onion, mushrooms, garlic and olive oil, sauté until vegetables are tender. Add Alfredo sauce and simmer 2 minutes.
  3. Mist 9 x 13-inch baking dish with cooking spray. Add turkey mixture, sour cream, mozzarella cheese and Parmesan cheese to pasta; stir to combine. Top with Provolone cheese. Bake 30 minutes or until hot.
