This isn’t just a pretty dish to decorate your dinner table— it’s also amazingly good. Made with oranges, jicama, bananas, pomegranate, peanuts and cilantro, this explosion of flavor is one you must try. This Christmas Eve Salad recipe is easy to prep and 120 calories per serving.
tablespoon cider vinegar
teaspoon chili powder
clove garlic, minced
oranges, peeled and sectioned
pound jicama, peeled and cut into julienne strips
tablespoons chopped cilantro
cup peanuts, chopped
cup pomegranate seeds
Remove peel from lime. Juice lime.
In blender container, combine mayonnaise, lime peel, lime juice, honey, vinegar, chili powder and garlic. Blend until combined.
Refrigerate until ready to use.
In bowl, combine orange sections and jicama.
Refrigerate at least 1 hour.
Before serving, add bananas and cilantro to orange and jicama mixture. Toss with dressing. Top with peanuts and pomegranate seeds.
