Ingredients

  • 8 cups baby spinach leaves
  • 1 red apple, thinly sliced
  • 1 cup walnuts, toasted
  • 1 cup thinly sliced celery
  • ¼ cup dried cranberries
  • ¼ cup cider vinegar
  • ¼ cup olive oil
  • 2 tablespoons honey
  • 2 teaspoons coarse grain mustard
  • 1 teaspoon kosher salt

Directions

  1. Toss together spinach, apple, walnuts, celery and cranberries in a large bowl.
  2. In a separate bowl, whisk vinegar, oil, honey, mustard and salt. Serve over salad.
