pounds beets, peeled, trimmed, and cut into 1.5-inch wedges
tablespoons olive oil
teaspoon kosher salt
teaspoon chopped fresh rosemary leaves
cup goat cheese, crumbled
cup toasted walnuts, coarsely chopped
navel orange, segmented
Heat oven to 400°F.
In large bowl, toss together beets, oil, salt, honey and rosemary leaves.
Place in single layer on baking sheet.
Bake 45 minutes or until beets are tender.
Place on serving platter.
Sprinkle with goat cheese, walnuts and orange segments.
