Ingredients

  • 1 (16-ounce) package JENNIE-O® Lean Ground Turkey
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 carrot, peeled and chopped
  • 1 tablespoon curry powder
  • 1 tablespoon tomato paste
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 small zucchini, chopped
  • 1½ cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon fresh lime juice
  • 1 tablespoon brown sugar
  • ¼ cup chopped fresh cilantro leaves

Directions

  1. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. Heat oil and add onion and carrot and cook 7 minutes or until onion is translucent. Stir in curry powder and tomato paste and cook 2 minutes. Add ground turkey, chickpeas, zucchini, vegetable broth, coconut milk, lime juice and brown sugar. Bring mixture to a boil. Reduce heat to low and simmer 10 minutes. Sprinkle with cilantro leaves.
