Ingredients

  • 1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
  • 4 corn tortillas
  • 1 cup egg substitute or 4 eggs
  • ½ cup milk
  • 1 canned chipotle chile in adobo sauce, finely chopped, plus 1 tablespoon adobo sauce
  • ⅓ cup finely sliced green onion
  • ¼ cup salsa
  • sour cream and cilantro leaves, if desired

Directions

  1. Heat oven to 350°F. Cook the sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
  2. Layer tortillas in baking dish. Sprinkle cooked and crumbled turkey over tortillas. In medium bowl, whisk eggs. Stir in milk, chipotle chile, adobo sauce and green onion. Stir in ½ cup cheese. Pour over tortillas. Bake 25 minutes or until set.
  3. Sprinkle with remaining cheese. Bake 5 minutes or until cheese is melted. Top with salsa, sour cream and cilantro leaves, if desired.
