Ingredients

  • LEMON DRESSING
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1 teaspoon crushed red pepper
  • PASTA SALAD
  • 8 slices JENNIE-O® Turkey Bacon
  • 2 zucchini, sliced lengthways
  • 4 cups whole wheat pasta, cooked as specified on the package
  • ½ cup chopped roasted red bell pepper
  • ⅓ cup olives
  • 3 tablespoons chopped fresh basil
  • ⅓ cup crumbled feta cheese

Directions

  1. LEMON DRESSING
  2. In jar with lid, add oil, lemon juice, honey, garlic and red pepper. Shake until well combined. Set aside.
  3. PASTA SALAD
  4. Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
  5. Prepare grill for medium-high heat. Spray grill with cooking spray. Grill zucchini slices about 2 minutes per side or until grill marks appear. Cut zucchini into 1-inch pieces. In large bowl, toss zucchini, pasta, bacon, bell pepper, olives and basil. Sprinkle with cheese. Drizzle dressing over salad; toss to coat.
