Here’s a no-gluten, yes-flavor salad solution to any lunch problems you might have. In under 15 minutes, you can have a lunch of fresh cucumber, roasted pine nuts, dried cherries and lean turkey breast!

Ingredients

  • 3 tablespoons low-fat sour cream
  • ¼ cup low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 1½ tablespoons white wine vinegar
  • ¼ teaspoon garlic powder
  • pinch freshly ground pepper
  • pinch sugar
  • 2 cups shredded JENNIE-O® Slow Roasted Turkey Breast Roast
  • 4 celery stalks, thinly sliced
  • ½ cup diced cucumber
  • ½ cup dried cherries
  • ¼ cup pine nuts, toasted
  • lettuce leaves

Directions

  1. In large bowl, combine sour cream, mayonnaise, mustard, vinegar, garlic powder, pepper and sugar; stir until smooth.
  2. Add turkey, celery, cucumber, cherries and pine nuts; stir to coat. Line plate with lettuce leaves and spoon turkey mixture onto lettuce.
