Ingredients

  • 1 (19.5-ounce) package JENNIE-O® Lean Hot Italian Turkey Sausage
  • 2 cloves garlic, minced
  • ½ cup low-fat plain Greek yogurt
  • ½ teaspoon ground cumin
  • ¼ cup chopped fresh mint
  • 4 whole wheat pita bread, split and toasted
  • Bibb lettuce leaves
  • 2 roasted red peppers, chopped
  • 4 canned artichokes, sliced
  • ⅓ cup ripe olives, halved
  • ¼ cup basil pesto
  • ¼ cup diced red onion

Directions

  1. Cook turkey sausages as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Cut sausages into ½-inch thick slices; set aside.
  2. In small bowl, combine garlic, yogurt, cumin and mint; set aside.
  3. Heat pita on grill 2 minutes each side. Cut each pita bread in half. Open pita halves and spread with yogurt mixture. Add lettuce, sausage, peppers, artichokes and olives. Drizzle with pesto and sprinkle with red onion.
