Ingredients

  • 1 tablespoon vegetable oil
  • ½ cup chopped onion
  • ¼ cup diced celery
  • 2 tablespoons shredded carrots
  • 1 tablespoon curry powder
  • 2 teaspoons granulated garlic
  • ½ teaspoon black pepper
  • 1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
  • 1½ cups long grain brown rice
  • 32 ounces reduced sodium chicken broth

Directions

  1. Heat oven to 375°F.
  2. In pan, heat oil and sauté onion, celery and carrots until tender. Add curry, garlic and pepper; mix well.
  3. In 9 x 13-inch baking pan combine vegetable mixture, ground turkey, rice and chicken broth; stir well. Cover with foil and bake 1 hour 30 minutes stirring half way through.
  4. Remove from oven when rice is tender and turkey is well-done, 165°F as measured by a meat thermometer.
