Ingredients

  • 1 pound 8 ounces shredded JENNIE-O® Bone-in Turkey Pot Roast
  • 1 tablespoon ground cumin
  • 1 teaspoon onion powder
  • 5 ounces shredded Cheddar cheese, divided
  • 3 cups enchilada sauce, divided
  • 10 whole grain tortillas

Directions

  1. Heat oven to 350°F.
  2. Mix shredded turkey, cumin, onion powder, 2.5 ounces cheese and ½ cup enchilada sauce together.
  3. Spread ½ cup turkey mixture down middle of each tortilla. Roll up. Spread 1 cup enchilada sauce in bottom of 2-inch deep pan. Lay enchiladas seam side down in pan. Cover enchiladas with remaining 1½ cups sauce. Sprinkle remaining 2.5 ounces cheese over enchiladas.
  4. Bake 30 minutes or until sauce is bubbling and cheese is melted.
