slices JENNIE-O® Turkey Bacon
cup coarsely chopped fresh blueberries
garnish: fresh blueberries, if desired
Prepare pancake batter according to package .
Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.
Stir chopped bacon and blueberries into pancake batter. Heat griddle to medium heat (350°F.). Drop batter by ¼ cup onto lightly greased hot griddle. Cook 2 to 3 minutes and flip. Cook another 2 minutes.
Serve with maple syrup. Garnish with blueberries and bacon, if desired.
